The Art of Cheese is Longmont, Colorado’s own artisan home-cheesemaking school. Led by Kate Johnson, an award-winning cheesemaker and dairy goat farmer, The Art of Cheese is the best place in Northern Colorado for anyone who wants to learn the ins-and-outs of curds and whey. Classes cover everything from soft cheeses like Chevre to mold-ripened cheeses like Brie, and even several varieties of hard cheeses like Colby, Cheddar, and Jarlsberg. Choose from a variety of ten classes, scheduled at different times each month. Or, participate in the 3- day cheesemaking boot camp and take all ten classes over a 3-day period. Beginning in late November, classes will be held at the expanded location of Haystack Mountain Goat Dairy at 505 Weaver Park Road in Longmont.
