In this class, you will learn an easy and delicious 30 minute mozzarella recipe including both a microwave method and a hot water/whey bath method. Learn what milks work best for this recipe and why, and then have some hands-on fun as we stretch the curd to create (and then eat!) a deliciously fresh and flavorful warm mozzarella. We’ll also make a quick, fresh ricotta and then combine these two wonderful cheeses into an easy burrata – a tasty stuffed mozzarella treat which you’ll get to enjoy with a glass of perfectly paired wine. Cheddar Cheese Curds – aka “squeaky cheese” – are so much fun to make and to eat! Or you can press and age them for a delicious wheel of sharp cheddar. Learn how to make this yummy treat to enjoy at your holiday parties or to make as a fun and tasty gift. Registration is required at www.theartofcheese.com.
The process of cheddaring involves piling blocks of curds on top of each other, and then milling and salting this somewhat press cheese before loading it into forms to press into a wheel to be aged. But you don’t have to press and age the curds – you can eat them fresh! You can even add flavorings such has green chiles, fresh or dried herbs, horseradish powder and more.
We’ll make a big batch of curds together and then you’ll get to custom-design your own small bag of curds to eat or take home with you. We’ll enjoy our fresh curds with an awesome beer pairing at the end of class.

Chili Jack…Cheddar with Chives…Dill Havarti…Smoked Gouda. Goat cheese rolled in sun dried tomatoes and fresh herbs. We love flavored cheeses!
These are just a few examples of ways you can flavor and embellish a whole host of varieties of cheeses. In this class you’ll get hands-on experience learning how to make several simple fresh cheeses and then make them uniquely your own by adding fresh and dry seasonings. We’ll also demonstrate how to use rind rubs, smoke and other techniques to flavor pressed cheeses. Registration is required at www.theartofcheese.com.

In addition to the class, cheese sampling and recipes, you’ll also get to take a brief tour of the Haystack Mountain Creamery at the end of class and will receive your choice of Haystack’s famous chevre logs (available in 6 flavors) or take $5 off any of their other award-winning cheeses. Join Art of Cheese Instructor Becca Heins, Certified Cheese Professional, in her home kitchen for an afternoon of hands on home cheesemaking. Registration is required at www.theartofcheese.com. Today’s class will focus on “bloomy rind” cheeses such as Brie & Camembert. These cheeses are best known for their white, bloomy exteriors and rich, creamy centers. And although Brie and Camembert are the most popular in this cheese family, they are just the beginning! In this class we will sample different styles of bloomy rind cheeses, and students will take home a bloomy cheese to ripen and enjoy. You will also learn how to use ash and different aging techniques to make a variety of cheeses from a few simple recipes. An instructional packet with recipes and aging instructions is included.
We’ll also explore Becca’s cheese aging space and discuss tips and aging techniques for this delicious family of cheeses. We’ll wrap up class with a relaxing wine and cheese sampling with some delicious Holiday serving ideas. Class size is limited to 6 for a truly personal home cheesemaking experience!

Ring in your holidays with this fun and tasty cheesemaking & tapas class co-hosted by The Art of Cheese and Spanish Sunday. Registration is required at www.theartofcheese.com. First you’ll learn all about the basics of cheesemaking and how to make a couple of simple yet delicious cheeses from Kate Johnson of The Art of Cheese. Then Denise Milligan from Spanish Sunday will teach you some wonderful recipes for making these cheeses into Spanish tapas (small plates) and will pair them with some perfect Spanish wines for a fabulous, festive evening. You’ll also have time to browse works by local artists and do a little Holiday shopping. You’ll have plenty of hands-on fun and will leave with lots of recipes and ideas for hosting your own delicious holiday tapas parties!
