The Prairie Scholars, which formed in 2010, is a songwriting duet from the high plains of Texas currently living and performing in lovely Colorado. The Band is made up of husband and wife team, Andy and Jessica Eppler. Their hyper-prolific songwriting has been captured in multiple all-original albums which have received glowing reviews, both locally and internationally. With their focus on their community in Boulder County, The Prairie Scholars have worked hard to be a benefit to not only local listeners, but businesses as well, by driving tourism and out of town business into their beloved city of Longmont. The Longmont Times Call featured them in a story saying “The Prairie Scholars have been a community booster ever since they arrived from their native Texas several years ago.”
In this hands-on class you will learn to make Colby, an American original! Registration is required at www.theartofcheese.com. Colby, Havarti & Gouda are all varieties of washed-curd cheeses. They have a mild flavor and a moist texture. They are pressed and ripened like other aged cheeses, but develop their full aroma and flavor in just 4 – 6 weeks. We will make a simple and delicious Colby together in class, and taste samples and review recipes for Havarti and Gouda. At the end of class we’ll take you on a behind-the-scenes tours of the Haystack Mountain Cheese Creamery and you’ll get to take home a free log of their award-winning chèvre.

Join us for our fifth installment of this popular educational and tasty happy hour with The Art of Cheese! You’ll get to enjoy some delicious cheese and cider pairings while watching homemade cheese being made by Kate Johnson. During this interactive demonstration class, you’ll learn the basic art and science behind the cheesemaking process, equipment and key ingredients needed and how to source the best milk for making cheese at home.

Join us for open mic night every Tuesday at Skeye Brewing! It’s a great space to network with other artists and musicians, try out some new tunes in front of an easy-going audience and enjoy some local brews. This open mic is one of the only local open mics with a piano, so keyboard players are welcome!
These cheeses are best known for their white, bloomy exteriors and rich, creamy centers. And although Brie and Camembert are the most popular in this cheese family, they are just the beginning! In this class we will sample different styles of bloomy rind cheeses, and students will each make a wheel of Baby Brie to take home to ripen and enjoy. You will also learn how to use ash and different aging techniques to make a variety of cheeses from a few simple recipes. An instructional packet with recipes and aging instructions is included. Join us at The Cheese Education Center at the Haystack Mountain Creamery for a fun, tasty and educational day. You’ll get to see where Haystack’s award-winning artisan cheeses are made and find our about how they got their start. You’ll also get to learn a little about how to make own cheese from The Art of Cheese, a cheesemaking school located within the creamery.
